usually i am not a huge fan of the new year's day meal. i like cabbage and pork, but the black eyed peas ... i might eat one spoon full and that is all the luck i need for the year. this year my mom made this recipe, and I couldn't stop eating them. black eyed peas have now moved from the dislike list, passed like list and straight to the top of the LOVE list! So back in LA, i cooked a large pot when jess's grandparents came to visit and they were a big hit ... which is why I don't have a final product picture (we were hungry and they were delicious)!
note: i didn't use as much chicken stock, only enough to cover the beans. then added stock as the beans cooked down to get a good consistency.
